INGREDIENTS

  • 3 tbsp apple cider vinegar
  • 1/4 cup honey
  • 1 tsp dry mustard powder
  • 1 tsp fresh lemon juice
  • 2 tbsp poppy seeds
  • salt and pepper
  • 1/2 cup olive oil

iNSTRUCTIONS

Assemble:

Put the vinegar, honey, dry mustard powder, lemon juice, poppy seeds, salt, and pepper into a  jar. 

Mix:

Put the lid on and give it a good shake to start dissolving the honey. Take the top off and add the oil. Shake again.

Is This keto?

Because we have used honey in this recipe it makes the dressing a little high in sugar and carbs, so although it is healthy, it is not strictly keto. You could use a keto honey substitute, like erythritol, stevia, or a monk fruit sweetener.

Variations

  • Like a creamier dressing? Try adding 2 tablespoons of Greek yogurt. I recommend the all-natural stuff with no added fruits or sugar, as this will make for a healthier dressing. If you like it really creamy, choose a yogurt with a higher M.F. (milk fat) percentage (at least 4%)
  • Take out the poppy seeds if you aren’t a fan of having to pick them out from between your teeth. Go with an herb like mint, basil or parsley instead.
  • If you don’t have honey or simply don’t like it, use maple syrup or agave instead.
  • The apple cider vinegar can also be replaced with white wine vinegar. This should lower the tanginess.

Yes, absolutely!

Can I use only lemon juice and no vinegar?

Yes, no problem. You can also use a white wine vinegar instead of the apple cider vinegar.

do i need to toast the poppy seeds first?

While you don’t NEED to toast them, doing so will enhance their flavor. I suggest doing so on LOW on a skillet. Just don’t burn them, as they will taste bitter. Let them cool before adding to the dressing.

How To Store Poppy Seed Dressing

Put the dressing in an airtight container or a resealable jar to prevent cross-contamination. This will also prevent the dressing from absorbing odors from other foods in your fridge. The dressing should keep for up to 2 weeks. You can freeze the dressing but know that the texture will change. You’ll want to leave a bit of space in the container to allow for expansion. Let it thaw overnight in the fridge before serving again.
