Well then, you’ve set sail on the perfect part of the sea.

Whatever that means.

Because today we’ve got crispety, crunchety, mostly healthety, but-really-let’s-just-say-TOTALLY-healthety-because-marshmallows-are-good-for-the-SOUL little squares that are packed with THIS MUCH ENERGY, YO!

Why You Will LOVE This Recipe

  • I am pretty sure your childhood involved a Rice Krispie treat recipe of some sort. And these are a total callback. Taste and nostalgia together!
  • I snuck a whole bunch of GOOD 4 U dried fruit, took out the NOT-GOOD-4-U-BUT-GOOD-FOR-YOUR-SOUL-LIKE-MARSHMALLOWS butter, and swapped in coconut oil, and then added some healthy carby goodness with those flaky pieces of heaven that some brilliant human called “oatmeal.” You know how I feel about any overnight oats or, really, any oatmeal recipe ever.
  • OH and nuts. You know I LOVE a CRUNCH. Taylor and CRUNCH sittin’ in a tree…
  • NO coffee OR  energy bites required! These are treats for adults, chock-full of so much energy to get you through the day.

FAQs

How long did you microwave it for?

I microwaved mine on half power for 1 minute, stirred and then did another 30 seconds. You don’t want to burn the marshmallows, so make sure to use only half power.

what do you use to press the mixture down?

You’ll want something sturdy, like a rolling pin or a flat-bottomed glass. You can also use a spatula, though I find some have way too much give to be effective. A tip: Place a piece of parchment paper or wax paper over the mixture to avoid sticking.

what can i substitute for the peanut butter?

Try almond butter or sunflower-seed butter.

How To Store Rice Krispie Treat Granola Bars

You can store these in an airtight container at room temperature for up to a week. If you put them in the fridge they should last for 2 weeks, and if you freeze them, they should be good for 2 months. If you’re worried they will dry out, wrap them in plastic before putting them in the container.
