We eat a lot of grouper in this house. You may not have heard of it, but it’s a flaky white fish that is super versatile and has much less fishy taste than a lot of fish!

And when you toss it on the grill (or use the air fryer fish method like in my air fryer salmon if you prefer) and douse it with a sweet and tangy orange lime marinade and lime butter (because using it in the air fryer mahi mahi wasn’t enough)?

I don’t know about you, but in our house, we eat a LOT of fish. For a bit of sweet and spicy flair, I love baking up some honey sriracha miso salmon and to bring in some of my favorite asian flavors, I love a baked salmon filet with asian cilantro pesto. One of the reasons why I love incorporating fish into my diet is that it’s SO healthy for you. Loaded with healthy fats and many other vitamins and minerals, fish is both delicious and good for your body! Today’s recipe is a grilled grouper fillet, but it’s no boring and plain fish recipe, that’s for sure! It incorporates sweet, spicy, and tangy ingredients to make a flavorful fish that the whole family will enjoy!

Ingredients Needed

Sure, sometimes all you need is a little oil, a squeeze of lemon, and some salt and pepper to make your fish taste delicious. BUT other times, you want to get a little fancy and this grilled grouper recipe brings a sweet and spicy fire and flair to take your fish to the next level! Here’s what you’ll need to pull together to make this recipe:

  • Orange Juice, not from concentrate
  • Fresh Lime Juice
  • Honey
  • Grouper
  • Olive Oil
  • Cayenne Pepper
  • Salt
  • Butter Lime Zest

How to pick Fresh Grouper

When hitting up your local supermarket to grab the ingredients you’ll need to cook up some grilled grouper, it’s important you keep your eye out for the freshest fish you can find! First off, make sure that the fish feels firm to the touch- if it’s mushy or too soft, it’s not as fresh. Secondly, the gills should be clean and bright red/pink- as the fish ages, the gills will dull in color, and if they’re grey or brown it indicates that the fish is starting to spoil. 

How to make Grilled Grouper

Heat

Add the lime juice, orange juice and honey to a microwave safe bowl. Heat until it’s slightly warm, then whisk everything together. 

Marinate

Add the grouper fillets to the marinade and set it in the fridge for at least 4 hours, but up to 8.

Grill

Once the fish has marinated, fire up your grill. Remove the grouper from the marinade and rub it with oil, then sprinkle it generously with salt and cayenne pepper. Place the fillets on the grill, skin side down, and cook until they’re done, flipping once during cook time. While it cooks, mix together the butter, lime juice and lime zest in a small dish.

Serve

Spread the butter over the cooked fish. Serve as desired and DEVOUR!

Serving Suggestions

Alongside a tasty fillet of fish, I love serving hot, cooked rice. I recommend adding some cilantro lime instant pot rice to your plate or cilantro lime cauliflower rice if you’re looking to keep things low-carb. Finish off your plate with some perfectly cooked asparagus stir fry and you’ve got yourself a winner of a meal!

Ingredients

For the butter

  • 2 Tbsp Butter, softened to room temperature
  • 1/2 tsp Lime zest
  • 1 tsp Fresh lime juice
  • Pinch of salt

Instructions

  • In a microwave safe dish, mix the orange juice, lime juice and honey. Microwave for 10-20 seconds until slightly warm to allow the honey to melt and whisk again.
  • Place the grouper into the marinade, flesh side down, and marinate for at least 4 hours – but 8 is best.
  • Once marinated, pre heat your grill to medium high.
  • Take the grouper out of the marinade and rub with oil. Then, sprinkle with a pinch of cayenne pepper and salt.
  • Grill the grouper, skin side down for 4 minutes, then flip and cook another 3-5 minutes, depending on the thickness of your fish. Mine was perfect at 9 minutes and it was about 3/4 inch thick. You want the internal temperature to be 145 degrees F
  • While the grouper cooks, mix the butter, lime juice and lime zest. Add a pinch of salt and stir
  • Spread the butter over the cooked fish.
  • DEVOUR!
