It took a while (and maybe a few burnt onions) to get it right but I think you’ll approve of our efforts once you try this mix of sizzling red onions, a party of colorful bell peppers, and hearty Portobello mushrooms.

INGREDIENTS

  • 2 tbsp olive oil
  • 1 red onion
  • 3 portobello mushrooms
  • 1 red pepper
  • 1 yellow pepper

You can prep these yummy fajita veggies ahead of time by doing all the slicing at your convenience then storing them in an airtight container. Or you can cook them THEN pop them in an airtight container. The same method of preservation applies to leftovers. They’ll be good for up to 3 days in the fridge. When it’s time to eat once more, toss the veggies in a warmed-up skillet or heat them up in the microwave (though they’re straight-up magic when you eat them fresh out the skillet).
