While this recipe calls for the basic s+p, you can always add a little garlic or onion powder, red pepper flakes, fresh herbs, or sriracha.
Since the whole point of poached eggs is to have a yummy, runny yolk, you will have to toss any eggs where the yolks break as you crack the egg into the ramekin.
No vinegar is needed here! While vinegar is traditionally used for poached eggs to help them hold their shape, we do not need that since we are cooking our eggs in ramekins.
