And if you’re all about berry-and-chocolate goodness like I am, then you will go crazy over this chocolate-covered raspberries recipe that I have for you today! It only calls for 3 ingredients, is absolutely delicious, and is the PERFECT easy dessert recipe to make for your family or serve to your guests!

Are Raspberries good for you?

They most definitely are! Raspberries are a fantastic source of potassium omega-3 fatty acids, and are chock full of antioxidants. They also boast a high amount of vitamin C and manganese, as well as trace amounts of vitamins K, E, and B. They are a great snack and a tasty treat, all in one!

Ingredients Needed

This recipe might be the easiest recipe on the face of this earth. It is absolutely delicious, but only calls for 3 ingredients total! Here is the rundown on what you will need to make chocolate covered raspberries at home:

  • Semisweet Chocolate Chips
  • Coconut Oil
  • Raspberries

How to make Chocolate Covered Raspberries 

Melt

Line a pan with parchment paper and set it aside. In a small microwave-safe bowl, add the chocolate chips and coconut oil and microwave until melted. You’ll need to stop and stir it every once in a while.

Dip

Dip each individual raspberry into the chocolate, shaking off any excess, then place the berries on the parchment paper. 

Chill

Place the pan in the fridge for 5-10 minutes, or until set.

Top Tips for making Chocolate Raspberries

  1. Use Half Power: When using your microwave, make sure it is set to half power, so as to not burn the chocolate while it’s melting.
  2. Use a small bowl: When melting the coconut oil and chocolate chips together, it is ideal to use a small bowl so that the chocolate is deep and thick. This will making dunking the berries much easier. 
  3. Use Large Berries: The bigger, the better! This makes for a larger and more satisfying treat to bite into!

How to store Chocolate Raspberries

If you used fresh raspberries as the recipe calls for, these can be dunked, chilled, then placed in an airtight container in the fridge. They will last for about a week this way. Another fun way to store these raspberries is in the freezer. Dunk and place them on the parchment-covered pan, as the recipe states, but then pop them in the freezer to firm up. Once frozen, place the frozen chocolate-covered raspberries in an airtight container. They will last in the freezer for up to 3 months this way. Fresh or frozen, these are a tasty treat!

Ingredients

  • 3 Oz Semi sweet chocolate chips (DF if needed)
  • 1 tsp Coconut oil
  • 1 6oz Package Raspberries

Instructions

  • Line a cookie sheet with parchment paper
  • In a small, microwave safe bowl melt the chocolate chips and coconut oil in the microwave on half power. Cook in 30 seconds intervals, stirring between each interval, until smooth and melted.
  • Dip each raspberry into the chocolate, lightly shaking off any excess, and place onto the parchment.
  • Once done, refrigerate 5-10 minutes to set.
  • DEVOUR!
