INGREDIENTS

  • 6 large eggs
  • 1/2 jalapeno or 2 tbsp, diced.
  • 1 avocado halved pitted, and peeled
  • 1 tbsp freshly squeezed lime juice
  • 1/4 cup mayonnaise
  • 2 tbsp fresh chopped cilantro divided
  • 2 tbsp everything bagel seasoning
  • Salt and black pepper to taste.

INSTRUCTIONS

Boil

Fill a small sauce pot with water enough to submerge 6 eggs and bring to a boil. Place your eggs in the water using a spoon and boil for 10-12 minutes until yolks are hard. Once ready, remove from the saucepot and carefully place in an ice bath.

Cut

Peel your boiled eggs and cut them in half lengthwise. Place the whites on a serving plate remove the yolks with a spoon and place them in a large bowl.

Mix

In the large bowl with egg yolks, add mayonnaise, diced jalapeno, avocado, half the cilantro, lime juice, and salt and pepper. With a fork, mix until well combined. Alternatively, add all ingredients to a food processor and process until blended.

Garnish

Begin spooning your deviled egg mixture into the eggs. Garnish with everything bagel seasoning, and remaining cilantro, and serve.
